Vegetable Rice Noodles

I  do noodles every Saturday. Most of the time just do the Maggi instant noodles. Once in a while will try out something else. Last week I had Vegetarian rice noodles at our office canteen. I wanted to try that for the weekend. Initially my kids were bit skeptical that nothing can be as tasty as maggie. It  tasted so nice that my kids willing to alternate with their maggie
Ingredients
Rice noodles – 500 g
Firm Tofu – 1 cup (diced into 1 inch cube and fry it in 1 teaspoon oil)

Chye Sim – 1 Cup Wash and Take the leaves and remove the center stem

Bean Sprouts – 1/4 cup
Red chillies (Soft ones) – 5 (grind to paste)
Garlic – 3 tablespoon
Sesame oil – 1 tablespoon
Onion – 2 tablespoon (finely chopped)

Method:
Put the noodles in the hot water and leave it for 1 min (I have used the fresh one if you are using dry cook it per instruction).  and drain the water. Keep it aside

Heat the oil in the kada and when the oil is hot add garlic. Fry till it is in brown color. Add onion and fry till it is soft

Add Bean Sprouts, salt and cook it for 2 mins

Add Chye Sim and fry for another 2 mins.  Add Soya Sauce and mix well



















Add Noodles, fried tofu, salt and red chilles paste.



















Mix well and cook it for another 3 mins. Stir it in between
Serve hot
