Ingredients:
Carrot – 3 Medium sized Carrots
Milk – 1 Litre (Lowfat)
Sugar – 3 Tablespoon (For me and my husband I don’t add any sugar.. Sugar from condense milk is good enough)
Condense Milk – 2 tablespoon
Cashew and Almond together – 1/4 Cup
Cardamom Powder – 1/2 teaspoon
Method:
Warm 1/2 Cup of milk and soak the nuts in it for 1 – 1 and 1/2 hour
Peel the skin of the carrots and chop it (you can chop into bigger junks)
Pressure cook this by adding 2 cup of milk till 4-5 whistles. Allow it to cool . Transfer the cooked carrot (just take carrot pieces alone) with very little milk grind the carrots to smooth paste
Grind the Nuts to smooth paste. If needed add Milk used for cooking carrot and make to to smooth liquid
Add condensed milk,milk used for cooking carrot, grinded nuts paste and sugar to this. Continue to stir the milk. Let the milk boil for another 3-5 mins. Switch off the flame.
When the milk becomes warm add the carrot puree and cardamom powder
Serve it hot or cold with nuts on the top. I prefer to have it as cold
