Spinach Poha Uppuma – Spinach Poha Upma

Poha, All time quick fix for any meal (can be quick lunch box item too). Normally I will have fresh spinach from my weekend shopping for Monday cooking. So most of the time for the Monday lunch it will be with Spinach. Yesterday was my son’s birthday we had heavy meals, sweets, cakes etc…and wanted to take rest from eating…So i added it to my poha upma along with spinach and carrots. It turned out to a healthy yummy  and simple lunch box.


Ingredients

  1. Poha – 2 cups
  2. Spinach   1 1/2 cup finely chopped (Wash and cut)
  3. Carrot   1/2 Cup (finely chopped)
  4. Onion   1 medium(finely chopped)
  5. Turmeric Powder – 1/4 teaspoon
  6. Dry red chillies    3 no.(broken in to pieces)
  7. Lemon Juice – 2 tablespoon
  8. Curry leaves    few
  9. Almond   6-7 no.s (Slice it thinly)
  10. Urad Dhal – 1 tablespoon
  11. Bengal Gram Dhal –  1 tablespoon
  12. Mustard seeds   1/4 teaspoon
  13. Salt    to taste
  14. Oil    2-3 teaspoon

Method

  • Wash and soak poha for 1-2 minutes and drain them completely and keep aside.
  • Heat oil in a pan,add mustard seeds when it splutter add Urad Dhal,  Bengal Gram Dhal, Red chilli, Curry Leaves fry till dhals are golden brown

  • Add finely chopped onions and saute for a minute.

  • Then add finely chopped carrots, Spinach,a pinch of turmeric powder and stir well..cover it with a lid for 3 minute. Let the Spinach and Carrot get cooked

  • Then add the drained poha,enough salt and mix everything well and lastly squeeze some lemon juice and mix well.

  • Healthy yummy spinach poha upma is ready to serve.
