Chocolate Cake – Eggless Chocolate cake – Baking recipes – Eggless Baking

My sons are die hard chocolate fans. Since I started this blog this is the first birthday  for my first son. When I asked him about his birthday cake he said baking our own birthday cake would be special instead of our usual ordering. And of course he wanted all chocolate cake. So I decided to bake one for him also wanted to try my hands in frosting and decorating.. Of course start with some simple one first…So here you go with what I baked ….He loved it.. I felt much more satisfied and accomplished!. I already got my orders for my second son’s Aug birthday!

Ingredients:
  • 3 cups flour
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoon cocoa powder
  • 2 teaspoon of instant coffee powder
  • 2 cups water
  • 2 cups sugar
  • 2 teaspoon vanilla
  • 2 tablespoon white vinegar
  • 1/2 cup Oil
Method:

Blend together the wet
ingredients – water, vanilla, vinegar, oil. Blend the ingredients well using hand held mixer

Add
sugar and blend till sugar dissolves. I took me about 3 mins using hand held electric beater. I have used medium speed

Sift together, the dry
ingredients – flour, cocoa powder, baking soda, salt.

Incorporate
the dry ingredients into the wet ingredients. Do it in two batches. Mix till it is completely blended

Divide the mixture into 2 and bake it as 2 separate cake or bake it as one cake and cut into two (horizontally) later. I have baked as 2 separate cake

Bake
at 180C for 30 minutes or until fork inserted comes out clean.  Let it cool down

Frosting of the Cake

Chocolate frosting:
1/2 cup butter (I used the 100g pack)
2/3 cup Hershey’s cocoa
3 cups powdered sugar (I have used only 2 1/4 Cup)
1/3 cup milk (Add little by little otherwise it the frosting will be watery)
1 teaspoon vanilla extract

Melt butter. Add cocoa power, sugar, vanilla. Add milk little by little and blend well. Keep scraping the sides to make sure all the ingredients blend in well.
(Don’t add too much of milk, the frosting will become runny and u will not be able to spread easily)

If have made one big cake, cut the cake vertically into half, spread some
sugar syrup on the top of one half (spreading sugar syrup is optional. It gives
you a softer cake). Since I baked 2 cake I have applied Sugar syrup on top of each cake

Spread
the frosting on one of the cake and put the other cake (with sugar syrup side down) on top of it. Apply the frosting on the top. Sprinkle the chocolate shaving on the top

Chocolate Shavings:

  • One chocolate bar (for the chocolate shavings)

Take a block of chocolate (I used semi sweet cooking chocolate ). For doing chocolate shaving,

  • Place paper on the table
  • Take the chocolate
  • With peeler start scraping the chocolate.
  • Start from the edges and let the curls fall on the paper

Decorate the cake with the chocolate shavings.
