Ingredients:
Paneer Cubes – 1 1/2 Cup to 2 Cups (for kids I put 2 cups as they love Paneer) I used store brought paneer
Onion – 1
Green Chillies – 4
cardamom – 2
Cloves – 3
cinnamon – 1 inch
Bay Leaves – 1
Mixed Nuts – 2 tablespoon (I have used Almond, Cashew, Pista and Walnuts)
Basmathi rice – 1 Cup
Ghee – 2 teaspoon
Oil – 3 teaspoon
Salt As required
Mint leaves – 5-7
Cumin seeds – 1 tablespoon
Method:
Soak Rice for 10 mins in water. Drain it and let it dry for 30 mins. Heat the kada and add 1 teaspoon of Ghee and rice and fry till moisture completely absorbed
In Same Kada Add Oil and Add Mixed nuts fry till golden brown and keep it aside
Next add Paneer and fry till brown and keep it aside
In same kada Add Onion and Green Chillies and fry till Onion is transparent. Let it cool and grind to paste
Heat another teaspoon of Ghee and Oil in same kada
Add All masala items (bayleaves, Cinnamon, cloves, cardamom, Cumin seeds) and fry for 1 min
Add grinded Onion and Green Chillies paste and add 1/2 cup of water. Let it boil
Add 2 cup of water, Mint Leaves and rice let it boil
Transfer it to rice cooker and cook it
Once rice is cooked and add fried nuts and Paneer
