Wild Rice Salad

I love Wild rice. I use that once or twice a week minimum to substitute for my regular rice. Actually I can eat plain also it is so good by itself. Almost like eating Sundal. I wanted to try it out for my salad with Cheese. It came out pretty good. It is very good option for dieters and whoever looking to have balanced diet. I have added Carrot and Peas you can add your favourite vegetables like Broccoli, Asparagus etc.. So Enjoy simple yet tasty dish.. This is definitely for some who doesn’t want to spend much time in kitchen

Ingredients
1 cup cooked wild rice
1/2 carrots, peeled and chopped
1/4 Cup Peas – Cooked (I have used Fozen Peas and cook it in microwave for 4 mins)
1 tomato, chopped
1/4 cup Onion finely chopped
Juice of 1 lemon
1/4 cup Fat Free Cottage Cheese
3 tablespoons Coriander Leaves/ Cilantro, roughly chopped
Salt as required
Black pepper – 1 Teaspoon (adjust to your spice level)

Method:

1. In a bowl, mix together the wild rice, carrots, cooked Peas.onion and tomato.

2. In a separate bowl, add the lemon juice, Pepper and salt

3. Pour dressing over wild rice mixture and stir to combine.
4. Let chill in the refrigerator for 30 minutes. (if you want it to have it as hot you can skip this)

5. Take the bowl out, let it come to room temperature, and serve.

    Hey Veena, I like wild rice and other brown rice as well but my family would not touch it..this looks very healthy and lovely!
