Brinjal / Eggplant Quinoa

I had some left over brinjals / Eggplant from last week. With kids won’t come home for lunch I wanted to try out Brinjal Quinoa. It is similar to Vangai Bath but replace rice with Quinoa. I have added some peanuts to the Quinoa to have some nutty flavour. It really came out well. For Masala Powder you can use either Vaangi Bath made at home or store brought one. You can try out with bisibelabath masala powder also



Ingredients:
1 Cup Cooked Quinoa
Brinjal – 4 Nos
Onion – 1 No
Tomato – 1/2
Garlic – 2 pods
Bengal gram dhal – 1 teaspoon
Urad dhal – 1 teaspoon
Turmeric powder – a pinch
Mustard – ½ teaspoon
Ghee – 2 tablespoons
Curry leaves – few
Salt – 1 teaspoon or as per taste

Bisibele Bath powder – 2 teaspoon
Chilli powder – 1/4 teaspoon (Per spice)
Fried Peanut – 2 teaspoon


Method:


In a kadai put the ghee and when it is hot add mustard. When it pops up, add bengal gram dhal and urad dhal and fry till it turns light brown. 
Add chopped onion, curry leaves and fry well.
Add Tomato and Garlic and fry till tomato is mushy
Add brinjal along with turmeric powder and salt and stir fry till the brinjal is soft. 
Add bisibele bath powder and stir well. 
Then add cooked Quinoa and mix well.Serve Hot
