When we were in India last year my son had bonda and fell in love with it Also. We Tried Vada Pav. till I had that I thought vada pav is something to do with Vada (like masala vada or something) didn’t realize it is with Aloo Bonda.. First time when I did I deep fried and there is lot of oil.. Later I tried making vada/bonda using non stick kulipaniyaram tawa. it came out extremely well no difference in the taste. So from there I use only this version of bonda/vada
Ingredients:
3 Boiled Potatoes
1 teaspoon of finely chopped Ginger
4 Curry leaves finely chopped
1 Teaspoon of Mustard seeds
1 Teaspoon of Cumin seeds
3 Green chillies finely chopped
1 Teaspoon of Turmeric powder
2 Tablespoon of chopped Coriander
Salt to taste
3 tablespoon of oil
5-6 Pav (Bun Bread)
2 Tablespoon of Butter
Method:
1. For Vadas, mash the potatoes, now take a deep vessel, heat the vessel with a teaspoon of oil. Add Cumin seeds once the seeds starts crackling; add curry leaves, chopped green chillies and ginger and fry for 1 minute on a low flame.
2. Add mash potatoes, salt, Turmeric powder and mix properly. Cook for few minutes on a low flame.
3. Add Coriander leaves and switch it off
4. Let the potato mixture cool down, once cool make small size balls.

5. Make a batter, with Baji/Bonda flour by following instruction on the pack
6. Take Kulipaniyara tawa and add 2 drops of oil lin each spot. Dip the potato vada (patty) in the batter and coat properly with the batter. And put it in each slot. Make sure it is fully covered with batter. If it is not add more batter to each spot.
7. Turn to other side when it is cooked (brown color) and cook till vada is in brown color
8. Take the pav (bun breads), make a slit in between. Spread butter, toast it on flat tawa. apply a teaspoon tomato chutney. Stuff the vadas in between and serve.

If U Dont Mind I Can Say A Suggestion Don't Make Vada In The Appam Chattti And Fry It In Oil (Deep Fry) As I Have Ate The Vada Pav In My Home I Knew That Paav Buns Must Be A Litle Rough So That The Vada Paav Would Be Awesome Love All Your Recipes Keep Posting CHEERS!!!
