Kovaikkai (tindora, kovakkai) chutney

Before I started this blog I used to do normal chutneys. After this I started trying out different things. One of the big area I started to experiment is to make chutney / Thuvaiyal using Vegetables. Kovaikkai is one of favourite vegetable for our family. We used to do Poriyal, rice, Sambar. Today I wanted to try Chutney out of it. It came out be very good. Try it out to believe it


Ingredients:
Kovaikkai – 3/4 Cup
Tomato – 1/2 Medium 

Cumin Seeds – 3 teaspoon
Garlic – 4 Pods
Ginger – 1/2 Inch
Small Onion – 4-5 (optional)
Green Chillies – 4
Red Chillies – 2 (adjust to ur spice)
Urad Dhal – 2 teaspoon
Mustard seeds – 1/4 teaspoon
Curry leaves – 10
asafetida a pinch

Salt per taste
Oil – 1 tablespoon


Method:


Cut the Kovaikkai into small round pieces

Head kada and add 1/2 tablespoon oil
When Oil is hot add Cumin seeds when it start to crackle
Add Onion,ginger and Garlic and fry till Garlic Onion is translucent
Add 6 Red Chillies and Tomato and fry for 1 min
Add Kovakkai and bit of salt and Fry till it is cooked.Switch off the heat and let it cool down

Transfer the mixture to Blender

Grind to coarse paste
In the same kada add reminder of the oil
When it is hot add mustard seeds and cumin seeds when it start to splutter add urad dhal, 2 red chillies and curry leaves fry till dhal is brown in color. Pour this to chutney and serve.
