Quinoa Beans Salad

I am big fan of Quinoa. I can eat just plain cooked quinoa. My first son / Husband is neutral. My 2nd son love it (He has more of my taste :-)). I can substitute rice with quiona in most of the dishes. It is so rich in protein and counted as grain
Ingredients:


Quinoa  – 2 Cup
Black Beans and Kidney beans – 1 cup
Cucumber – 1 1/2 cup

Cherry Tomato – 15 and each cut into 4
Lemon juice – 3 tablespoon
salt per taste
Cumin seed powder – 2 teaspoon
Black pepper powder – 2 teaspoon (Adjust to ur spice level). If you prefer green chilli spice use finely chopped chillies instead


Method:
Cook quinoa or as directed in the package
Transfer cooked Quinoa to broader vessel and spread
Wash and soak beans overnight and cook with salt till 3 whistle in pressure cooker. Let it cool and drain the water. Keep it aside
Thinly slice Cucumber. (Cut cucumber into 4 pieces lengthwise)
Mix the Cucumber with Cooked Quinoa
Add Cooked Dhal & cherry tomatoes  to Quinoa
Add pepper powder, cumin powder to lemon juice mix well
Pour this on Quinoa
Mix it well
Serve it hot or cold
