Zucchini Poriyal

I brought Zucchini thinking to use it in Pizza or in lasagna but as the week progress my plan has changed. So I left with Zucchini in the fridge. I remember my sister saying about making dish out of it. When I called her she said what she does is gravy for chapatti. My next resource is Google.. After much of search I have decided to to my own version of the Poriyal. It turned out to be pretty good


Ingredients


Zucchini – 2 (Yellow or green. I have used
Yellow)
Onion – 1 Finely chopped
Garlic – 5
Green Chillies – 3
Cumin Seeds – 1 teaspoon
Ginger – 1 inch
Oil – 2 teaspoon
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Besan flour – 1/4 Cup
Curry Leaves- 1 String
Salt as required


Method:


Wash and cut Zucchini
Pound Garlic, Green Chillies, cumin Seeds, Ginger into coarse paste
Heat the Kada, When it is hot add oil.
When Oil is hot add mustard seeds and when it splutter add urad dhal
When it is brown add curry leaves and Onion
When Onion is soft add Pounded Coarse Paste
Fry for 2 – 3 mins
Add Zucchini and salt and let it cook
When it is 3/4th cooked add besan flour and Mix it well
Let it cook it for another 5 mins
And switch it off
