Kuli paniyaram

I love this dish and back home my mum does it very often. Those days I seldom worry about oil (gone those days now every drop count). I used to have traditional iron which requires lot of oil.. So I seldom use it..Last Nov when I was in India I brought Non stick Kuli paniyaram chatti. Now it is regular item for our dinner or weekend breakfast. 


Ingredients:


Dosa batter – 2 Cup

Carrot – 1/2 Cup
Curry Leaves – 1 string
Green Chillies – 2 split into 4
Onion – 2 tablespoon (Optional)
Urad Dhal – 2 teaspoon
Bengal Gram Dhal – 2 teaspoon
Mustard Seeds – 1/4 teaspoon

Method


Heat the kada and add oil 
When it is hot add Mustard seeds
When it start splutter add urad dhal and bengal gram dhal
Add Curry Leaves and green chillies fry for 20 sec
Add onion and fry till it is soft (no need to fry till brown)
Add Carrot and fry for 20 more sec
Mix it with Dosa batter
Heat the paniyaram chatti and add 1 drops oil into each hole. 

Once it heats, add spoonfuls of batter into each hole until its more than 3/4th full. Let it cook until the bottom is browned and crisp.

Turn over and cook the other side. Make sure that the stove is at medium-low so that it get cooked properly

Once both sides are brown and crisp, you can take it out and serve
