I love this Carrot chutney for the mix of sweetness. It goes well with dosa, Chapatti and idli. I have tried as base for wrap also. My kids love it for the color of it. I like it because this doesn’t required lot of oil or coconut. It can last longer when we refrigerate.
Ingredients:
Grated Carrot – 1 cup
Red Chilli – 5
Bengal gram dhal – 1 tablespoon
Urad dhal – 1 tablespoon
Tamarid – small gooseberry size
Asafoetida Pinch
Oil – 3 teaspoon
Salt as required
Curry leaves – 1 string
Method:
Heat the kada
Add Red chilli, Bengal gram dhal and Urad dhal
Fry till Dhals become brown
Keep it aside
Add 1 teaspoon Oil in kada
When oil is hot add grated carrot
Fry till raw smell goes off
Add tamarind and fry for 30 sec more
Add Curry leaves and fry for 20 sec more
Switch of and let it cool down
Add fried Red chilli, Bengal gram dhal, Urad dhal and salt
Grind this to Chutney conistency
