This week the spinach I saw in the market was very fresh so I ended up buying more. I left with some more even after making kootu this weekend. So decided to do pasta with that. I added lite cheese so that it is healthy.Use of whole grain macaroni healthier option. Some of brands in the market has good protein content. Definitely it is good meal to back for school
Ingredients:
2 C cooked whole grain macaroni
1/2 medium Onion; chopped
3-5 cloves Garlic; minced (U can vary this per taste)
1 teaspoon Olive oil
1 medium Red bell pepper cut into strips
1 bunch of Spinach
1 tsp Salt; or to taste
Freshly ground Pepper to taste
Low fat Cheese (mozzarella and cheddar)
Chopped Coriander Leaves – 2 tablespoon
Cook the pasta and drain as per your packet information.
Heat the oil over medium high heat, and cook the onion and garlic until the onion is tender.
Add the red bell pepper strips and cook for 3 minutes longer.
Stir in the spinach. cook Spinach
Toss with the pasta, and add salt and pepper.
Top with low fat cheese
Garnish with Coriander leaves
