Keerai Kootu (with Coconut) – Simple Side dish

Every week I make sure our family has 3 serving of Keerai (any type) . This is our usual weekend dish (because I get Keerai fresh on every Sat). This is not our usual way of making it. Normally I don’t add coconut. Today I wanted to try out traditional way.

Ingredients:

Keerai – One bunch (I used Spinach)
Coconut – 2 tablespoon
Cumin Seeds – 1/4 teaspoon
Pepper – 5-7
Green Chillies – 2
Raw Rice – 1/4 tablespoon
Well Cooked moong dal – 3/4 cup
Coconut oil – 1/2 teaspoon
Salt

Method:
Wash and cut the keerai
Soak the rice in water
Cook the Keerai with little sugar and water (to prevent the color)
When it is half done add cooked Moong dal. Let it boil for 5-7 mins
Add Coconut, Soaked rice, Cumin Seeds, Green Chillies, Pepper into mixie and grind it
Add the gravy into Keerai with salt
Heat small spoon and add coconut oil
When the oil is hot add the mustard seeds when it splutter add to Keerai
Let it boil for 1 more min and switch it off
