My kids love peanut chutney. I already posted few versions Andhra Peanut Chutney, Mint Peanut chutney, Simple Peanut Chutney. If I make dosa Peanut chutney is a must for my 2nd son. He swears it is best combo. Being big fan myself I don’t have problem with it. Having roast peanut in stock is a must for me. It is very simple yet very flavourful chutney
Ingredients:
Peanut – 1 cup
Small Onion / shallots – 5
Garlic – 5
Grated coconut – 2 tablespoon
Red chillies – 4 (adjust to your spice level) + 2 dry chillies (optional)
Salt to taste
Tamarind paste – 1 teaspoon (from 1/2 marble size)
Oil – 4 teaspoon
Mustard seeds – 1/2 teaspoon
Curry leaves – 10
Urad dhal – 1 teaspoon
Method:
Heat the 3 teaspoon of oil. Add Garlic and fry till slight brown color. Add shallots and fry till transparent. Add coconut and fry for a min. Switch it off and let it cool down. Grind it using blendar or food processor
Heat rest of the oil and add mustard seeds. Let it pop. Add urad dhal, 2 Dry chillies and curry leaves. Fry till dhals are brown in color. Pour it on grinded chuntney and mix well
Serve it with your favourite dish
