Wanton noodles – Something I recently tried at a Chinese vegetarian restaurant. I was talking about it with my sons, and they said they liked it as well, so I decided to give it a shot. Originally intended to get the wanton – dumplings from the frozen section, but decided to make them from scratch. I used Soya chunks for protein because we are making a vegan version of noodle. You can substitute pork or chicken for the soya chunks if you prefer. You can make the wanton dumplings ahead of time and freeze them.
The noodles used in this recipe must be extremely thin. You want very crisp noodles for this, so don’t overcook them.
I used Soy sauce as well as oyster and mushroom sauce. My son said it tasted almost like hawker centre food. If you can’t find vegetarian oyster mushroom sauce, just use soy sauce.
Soya chunks – 1 cup (cook it in hot water with salt and drain it)
Pepper powder – 1 teaspoon
salt to taste
Carrot – 2 tablespoon
Green chilli – 2 (chopped finely. Optional)
For Sauce
Soya sauce – 2 tablespoons
Mushroom & oyster sauce – 1 tablespoon
For Noodles
Spicy Chili oil – 2 tablespoon
Sesame oil – 1 tablespoon
Garlic – 5 pods (chopped)
Bok choy – 10
Noodles – 500g
shiitake mushroom – 4 (soften it by placing it in hot water) – Chop it
Step by step instruction to make Dry Wanton Noodle
Mix in all the ingredients under wanton structure except wanton sheet. Mix well.
Take wanton sheet and place the stuffing. Bring the ends together to seal completely.
Boil water and place wantons and cook for 3-5 mins. Remove it from water keep it aside
Cook the noodles according to the package keep it aside
Heat 1/2 tablespoon of sesame oil, 1/2 tablespoon of chili oil and add garlic. Fry till brown color. Remove it. Add bok choy bit of salt and cook it. Remove it
Add mushroom and fry for 2 mins. Remove it
Now let’s make the noodles. Heat pan add mushroom& oyster sauce, Soya sauce, Rest of sesame oil and chili oil. Add cooked noodles, Sesame seeds and mix well.
Cook for 4-5 mins in high flame. Switch it off
Take noodles in a bowl. Add few fried mushroom, bok choy, mushroom and wonton.

Instead of steaming you can do deep fry or shallow fry the wanton
Instead of soya chunks you can use mock chicken/ pork or tofu
Make sure your noodles just done not over cooked
Use good sesame oil to get good flavour
