If you are bored with regular dosa you can try this potato pancake/dosa/uthappam. This recipe doesn’t require any fermentation and requires only 2-3 hrs of soaking of rice. If you make like Utthappam you can serve as Indian pancake for the kid’s breakfast. This perfect for those who don’t want to serve regular pancakes with all-purpose flour or atta. Adding vegetable makes it a full meal and keeps full for a long time. I have tried raw rice and idli rice both taste good. this version is with raw rice. If you are serving as vrat food then skip the onion
Ingredients:
Raw Rice -1 cup
Cooked and mashed potato – 2 (medium size)
Mixed vegetables – 1 cup
Onion – 1(finely chopped)
coriander leaves – 1 tablespoon
Curry leaves – a few chopped
Salt to taste
red chili powder – 1.5 teaspoon (adjust to spice level)
Oil – 1 tablespoon + to cook dosa
Method
Wash and soak rice for 3 hrs. Drain water. transfer to mixer
Grind with salt. Add cooked potato & red chili powder. Grind to smooth dosa batter
Heat oil. Add onion fry till transparent (I have removed it before adding vegetables as I wanted batter without onion for my son). Add mixed vegetables, curry leaves with salt. Cook it
Mix it with batter. Mix well
Heat dosa pan, pour the dosa. Drizzle oil Close it with lid. Cook till sides are browned.
Turn it over & cook again. Once done remove it
Serve it with chutney & sambar
