I wanted to try vegetable base kheer for quite some time I have posted sweet potato kheer. I have seen many posts about pumpkin kheer. I read in some blog this is done for Navratri. It is a very simple yet delicious kheer. You can add sugarless Koya or condense milk to increase the richness. I have added moong dal together with Pumpkin you can do it without or replace it with channa dal. Do try out this simple version and provide your feedback
Ingredients:
Grated Pumpkin – 1 cup
Moong dal/split yellow dal – 1/2 cup
Milk – 1/2 litter (I have used low fat)
Sugar / Jaggery – 3/4 to 1 cup (I prefer less sweet so I have used 3/4 and Jaggery)
Ghee – 3 teaspoon
Mixed nuts – 1 tablespoon (I have used cashew and Charoli / Chirongi / Saara Paruppu)
Cardamom – 1/4 teaspoon
Salt pinch
Method
Boil milk and let it cook down.. Add 1/2 cup water to jaggery heat it till it is completely dissolved. If you suspect impurity strain it. Keep it aside. ( I have added directly as my Jaggery is fine)
Heat 1 teaspoon of ghee add nuts and fry till brown color. Keep it aside
Heat rest of ghee add pumpkin and fry till it is cooked. Remove it. Fry Dal till nice aroma released
Now add this together cook till 2-3 whistle with 1 cup of water
When it is cool down open & Mash it
Add jaggery, Cardamom. cook again for 2-3 mins. Add fried nuts
Switch it off. Add boiled, cooled milk. Mix well
Payasam / Kheer is ready for Pooja & to serve!
