These days I love to try sweets with jaggery or karuppati. Sakkarai Pongal / Sweet Pongal is one of the first sweet I learned to make as it is very easy and you don’t have to really look for consistency and also you can make it in a pressure cooker. For this Pongal, I have replaced regular moong dal with whole green gram dal. It gave a nice healthy twist. Even though I have used jaggery the color of the Pongal remained white due to milk and less jaggery I have added.
Ingredients
Raw rice – 1/2 cup
green gram dal – 2 tablespoons
coconut gratings – 2 tablespoons
Milk-1/2 cup
Jaggery – 1/2 cup (Adjust to your sweet level)
Cashew nuts & raisin – 1 tablespoon
Cardamom – 3
Ghee – 3 tablespoon
Method
Wash and soak rice, green gram for 2 hrs separately
Heat 2 teaspoons ghee. Add cashew & raisin and fry till brown in color. Remove it and keep it aside
Add 3 cups of water and cook till rice is fully cooked. You can close it with lid for cooking it
Add Cardamom, a teaspoon of ghee & milk. Continue to cook for another 2-3 mins. Add coconut
Add Jaggery. Cook jaggery melted. Adjust salt
Add fried nuts and rest of the ghee. Mix well. Switch it off
Serve hot!
