I saw Romanesco in cold storage 5 / 6 years ago. I was not sure about the vegetable and let alone what to do with it. So I never brought it. Last week When I was in the US we went for team dinner at one of the restaurants it had a salad with roasted Romanesco. I didn’t order it as I was not sure what it is. Nowadays we get niche vegetables in the wet market these days. For the last few months, I was contemplating buying. This week When I saw that I remembered the menu at the restaurant. So I decided to give it a try. It salad came out pretty good. I have done it with pan-roasted Romanesco. If you prefer baking you can try out by roasting in the microwave at 180 degrees C for 20 mins or till sides are browned
Ingredients
Olive oil – 3 tablespoon
Salt to taste
Curry powder – 1/2 teaspoon
Garlic – 3 pods
Onion – few pieces (I have used white onion rings)
Cashewnuts – 10-15
Feta cheese – 2 tablespoon
Romanesco – 2 small head
Grapes – 10
Method:
Separate Romanesco into small flowerets. Blanch it in salted hot water for 10 mins. Drain it and keep it aside for 30 mins. Heat oil and curry powder, salt. Mix well. Add Romanesco and fry till it is cooked
Now roast each of ingredients except grapes till browned
Mix it together and add grated feta cheese and chopped grapes
Serve it
