I love mushroom, I have tried this at one of the cafes in Singapore when visited with friends. Portobello mushroom has a unique flavor. I had tried simple onion cheese stuffing. I wanted to try Indian style stuffing if you don’t have all the spices you can try with whatever you have. Just chili powder with Italian spice mix will give a nice flavor to the stuffing too. This can be served as a starter or breakfast itself.
Ingredients
Portobello mushroom -4
Cooked & diced Potato – 2 big (Cook with salt and slice it)
Vegetables – 3/4 cups (Capsicum, Stem of portobello mushroom)
Salt to taste
Olive oil – 1/4 cup
Chili sauce – 2 teaspoon
Oregano – 1 teaspoon
Ginger paste- 1/2 teaspoon
Garlic paste – 1 teaspoon
Onion – 2 big (chopped finely)
Red chili powder – 1 teaspoon (adjust to spice level)
Garam masala – 1 teaspoon
Turmeric powder – 1/2 teaspoon
cumin powder – 1 teaspoon
Cheese of your choice – 4 teaspoon
Method:
Heat 2 tablespoons of oil. Add onion, Oregano, Ginger, Garlic paste with salt. Fry till onions are browned. Add vegetables and mushroom stem. Add salt mix well.
Add Turmeric, Cumin powder, chili powder, and garam masala. Mix well. Cook for a min. Add cooked potato mix well. Adjust salt and continue to cook for a min.
Once it is ready, switch it off. Now take washed/cleaned mushroom. Stuff it with the vegetable stuffing.
Heat oil in a grill pan. Place the mushroom (stuffing facing the pan bottom) apply olive oil generously. Once cook tun it over and cook again.
Once it is completely cooked apply chili sauce on top of stuffing sprinkle cheese
Cook till cheese is melted.
Once done take it out and serve hot
