Vegetarian Japanese curry – Homemade Japanese curry recipe – Curry recipes

My 2nd son loves Japanese curry (of course Chicken.. Yes only I am vegetarian at home). I wanted to try at home however little hesitant because when I searched for a recipe I see a lot of onion in the recipe. I think browning onion gives a nice sweet flavor to the curry. I have used the store brought fish curry powder you can use your preferred curry powder. I also wanted more vegetables in the curry (which my son complained) original version has very little vegetable. This is definitely a good alternative to the regular sambar or kulambu
Ingredients:

Mixed vegetables – 1- 2 cups ( I have used 2 cups)
Onion – 2 (sliced)
Tomato puree – from 1 tomato
Oil – 3 tablespoons
salt to taste
Vegetable stock – 3 -4 cups
Tamarind paste- 1 teaspoon
Flour -1 heaped tablespoon
Curry powder – 1 tablespoon
turmeric powder – 1/2 teaspoon
garam masala- 1 teaspoon
tomato sauce – 1 tablespoon
Grated apple – 1/2 cup (take sweeter one)



Method:


Heat oil. Fry onion with a bit of salt till caramelized. Add Tomato puree cook for another 2 mins

Add flour. Mix well. Add mix vegetables and mix well. Add garam masala, curry powder, turmeric powder, tamarind paste, and salt

Mix well. Add vegetable stock and mix well. Continue to cook until vegetables are half done. 

 

Add grated apple continue to cook till vegetables are done. Adjust water if needed with more vegetable stock

Add tomato sauce mix well. Let it boil. Switch off

Serve with steamed white or brown rice

    The unusual combination of flavours works well. Everything was eaten with Indian basmati rice. Be adventurous and eat this tonight.
