I love to try different chutneys so for this I tried with vegetables the most. Sweet chutney is one of most favourite chutney for our family. So I normally have it in the fridge in almost all the time. My kids eat with almost anything. So I was thinking about other fruit base chutney. I like Pineapple with chilli powder for my snack. So I wanted to try pineapple chutney with an Indian twist. I loved it.. I had it with bread as well as paratha
Ingredients:
Onion – 1 (finely chopped)
Onion seeds (pyaaj ke beej)– 1 teaspoon
Urad dhal – 1 teaspoon
Oil – 1 tablespoon
Pineapple – 2 cups
Salt to taste
Red chilli powder – 1 teaspoon
Turmeric powder – 1/2 teaspoon
Jagger – 1/2 teaspoon
Lemon juice – 1 teaspoon (adjust based on sourness of Pineapple)
Method:
Heat oil and add onion seeds and urad dhal. Fry till urad dhal is brown in color. Add onion and fry till transparent.
Add Chopped pineapple. Cook for 2 mins. Add Turmeric powder, chilli powder and salt. Addd 1/2 cup water
Close the lid and cook for another 3-5 mins. Add Jaggery and mix well. fry till Jaggery melted
Add Lemon juice. Cook for another min. Switch it off. Let it cool down and store it in Air tight container.
