Matcha Cookies – Matcha almond cookies – Eggless Matcha Cookies Recipe – Cookie Recipe – Baking recipes

I am a big fan of Matcha tea in fact any dish with it. I love the flavour and aroma of it in the cookies. Knowing my taste my colleagues in China always send me few boxes of green tea / green tea cookies (so thoughtful of them). I wanted to try making it myself. I know a couple of my friends like Matcha too. Every time I travel I wanted to bake some and gift it to them but due to one or other reason that didn’t happen till now. This time finally I made it and they enjoyed it.
Ingredients

Whole wheat flour / Atta – 1/2 cup
All purpose flour – 1/2 cup 
Unsalted butter – 1/2 cup
Green Tea powder / Matcha Powder – 1 tablespoon
Salt – A pinch
Powedered sugar – 1/2 cup
baking powder – 1/2 teaspoon
Vanilla essence – 1 teaspoon
Chopped almonds – 1/4 cup


Method:

Sieve Wheat flour, all purpose flour, Matcha powder. salt and baking powder (twice). Keep it aside. Cream sugar and room temperature butter. Add vanilla essence and whip again
Add flour and make a soft dough. If the dough is too watery add reserved 2 tablespoon of flour. If it is too dry add a teaspoon of milk. 

Add chopped alomnds and fold it well

Leave it in fridge for 30 mins. Roll the dough into 1/2 inch thick disc. Using your favourite shape cookie cutter make cookies

Arrange it in baked tray. Pre heat the oven at 180 degree C. And Bake the cookies for 7-9 mins. Mine was done in 7 mins. or till sides are browned. Let it cool down completely

Store it in air tight container and enjoy it!
