I saw this recipe somewhere in a cookbook but couldn’t remember where. But this is very flavorful chutney for Idli or Uttappam or dosa. It is slightly different flavor from regular Coconut chutney. It is good alternative to the regular coconut chutney. It is perfect for quick fix for your busy weekday / lazy weekday. It is also done with ingredients that is readily available. Since this is made with fried coconut it can last for 2-3 days in fridge
Ingredients
Grated fresh coconut – 1 cup
Bengal gram dal / Broken Chana dal – 1 tablespoon
Urad dhal – 1 tablespoon
Salt to taste
Red chilli – 4-5 (adjust to your spice level)
Tamarind – 1 marble size ball
Oil – 2 teaspoon
To Temper
Oil – 1 teaspoon
Curry leaves – 10
Mustard seeds – 1/2 teaspoon
Urad dhal – 1 teaspoon
Method:
Heat 2 teaspoon of oil. Add dals and fry till brown color. Add red chillies and fry for 30 sec. Add grated coconut
Fry till moisture absorbed. Switch it off and let it cool down. Add 2 tablespoon of hot water to tamarind and make thick paste. Add tamarind paste and salt to fried ingredients. Once cool down grind to smooth paste
Add 1 teaspoon of oil in a pan and add mustard seeds. let it pop. Add urad dhal and curry leaves. Fry till dhal is in brown color. Add it to chutney
Mix well and serve
