I saw this on Vijay TV “Samayal Samayal with Venkatesh Bhat”. That was totally new to me. Impressed by the ingredients, I tried it the next day. It was really amazing. It just melts in the mouth even though I only shallow fried it with oil not with Ghee as recommended by the Chef in the show. After that, I have tried it a few times. Even though it sounds simple, it is a rich dish for a starter
Ingredients
Dry Black Chickpea / Black channa – 1 cup
Paneer – 1/2 cup (crumbled)
Grated Cheese (Parmesan) – 2 tablespoons
Roots of Coriander leaves – a handful
Greenchiliess – 2
Salt to taste
Onion – 2 (Slice it thinly)
Turmeric powder – 1/4 teaspoon
Garlic – 10 pods
Oil – 1 tablespoon + for cooking tikki
Roasted Cumin powder / jeera powder – 1/2 teaspoon
Cardamom powder – 1/2 pinch
Method:
Soak the Chickpeas over night. Add salt and cook till you can mash it (I have pressured cooked till 6 whistle). Drain the water and leave it aside
Heat tablespoon of oil and add sliced onion and fry till crisp and brown color. Switch it off and keep it aside.
Grind chickpea, panner, coriander leaves root, green chillies and Garlic. Don’t add water just sprinkle if needed. This need to be thick. Add Fried onion and grind it again.
Transfer it to a broader vessel. Add turmeric powder. Cumin powder and cardamom powder mix it well. Heat flat pan and take a small lemon size dough
Flatten it into thick and round tikki. Heat flat pan and take a small lemon size dough and flatten it with your hand and place it on hot flat pan. Add oil around it cook it at low medium flame. While cooking take the oil around the tikki and pour on top of it. Once cooked turn it over and cook again
Serve hot
