I had this sweet last time when I was in India at a restaurant; it tasted pleasantly different. I could taste the dates and other ingredients, but I couldn’t guess correctly. Later, I asked the server about the name of the dish and he brought the chef out. The chef roughly gave me the recipe. Guess what? It was made with tomato and dates, but I left the recipe in India itself. I googled it and I found a similar recipe at 7aumsuvai. So I have decided to try it out. It came out well.
Ingredients
Tomatoes – 2 (medium size)
Dates – 5 (seedless)
Ghee – 1 tablespoon
Cashew nuts – 1 tablespoon
Sugar – 1 to 2 tablespoons ( I have used only 1 tablespoon)
Method:
Soak Dates in hot water. Blanch the tomatoes. Remove the skin. Grind together with dates.
Heat 2 teaspoons of ghee and add cashew nuts and fry till brown in color. Remove it and keep it aside.
In the same pan add ground paste and sugar and continue to stir till it is glossy and not sticking to the pan. Add fried cashews and mix well
Serve it as a snack or dessert!
