Mushroom sandwich recipe – Mushroom cheese sandwich recipe – Bread sandwich recipes – Breakfast recipes – Brunch Recipes

Whenever my kids ask for mushroom sandwich I always do mushroom melt. In my last trip to India my kids had mushroom sandwich at their cousin’s place. They loved it. So these days I kind of try out different versions of Mushroom sandwich recipes. Mushroom is really good protein for vegetarians. So perfect for kids lunch box. Even if it is over cooked it retains the protein. So with this I have more option for lunch box. If you don’t prefer to add cheese you can add hung curd. I have done this for weekend brunch too. 
Ingredients



Mushroom (Button) – 400 g
Salt to taste
Onion – 2 medium (chopped finely)
Olive oil  – 3 teaspoon
Bread – 10 pieces
Grated cheese – 1.5 teaspoon (Per sandwich, optional)
Butter for toasting

For Grinding 
Mint leaves – 20
Green chillies – 1 or 2 (adjust to your spice level)
Cashewnuts – 15
Garlic – 10 Pods
Ginger  1 inch
Red chilli flakes – 1/4 teaspoon
Mixed Italian herbs – 1/2 teaspoon



Method:


In an blender / food processor take Garlic, mint leaves, soaked cashew, ginger. Grind it. Add water, mixed herb, red chilli flakes. 

Grind to smooth paste. Heat pan with olive oil. Add Onion and fry till slight brown color. Add grinded paste. Fry till oil separates

Add Cleaned and chopped mushroom, Salt. Mix well. Continue to cook till moisture

absorbed evaporated. Switch it off



Heat pan and place Bread and spread mushroom, sprinkleP cheese. Close it with another bread. Turn it over and toast it. 

Serve hot!
