I love Adai especially if it is spicy and crispy. Vella adai is something new that I had at my friends place. It was so tasty . I like Jaggery based sweets esp. The next day, I had it with butter and it tasted so yum! It is definitely healthier than other calorie loaded sweets. With the addition of Lentil it is well balanced in nutrients. My jaggery was quite clean so I directly grinded it. If you suspect Impurity in your jaggery melt it and strain it before using it.
Ingredients:
Raw rice – 1 cup
Toor dal / Thuvar dal – 2 tablespoon
Channa dal / Bengal gram dal – 2 tablespoon
Moong dal/ Split yellow dal – 2 tablespoon
Jaggery – 1/2 cup
Coconut – 1/4 cup
Cardamom – 1/4 teaspoon
Salt a pinch
Ghee to cook the Adai
Method:
Dry roast raw rice.Transfer to the bowl, add dals and Soak for 3 hrs
Drain the water and wash it once. Transfer it to mixer and grind it with coconut and jaggery. Add Cardamom and mix it
Heat pan and spread laddle full of batter. spread it(should be thicker) and drizzle ghee
Close it with lid and cook it. Remove the lid when side browned.
Sprinkle water and turn it over. And cook again. Once done remove it and Serve it
