Dal Bati is famous Rajasthani dish which is made with lentils (Dal) & wheat flour (Bati). This dish also has Ghee. Traditionally it is also deep fried in Ghee. I have done baking version. I heard about this few years ago from one of my Rajasthani colleague. He was mentioning he had dal Bati for weekend meal and it was too heavy etc..He said it is fried with ghee etc.. Last 5 years I have been visiting Chennai for work I have been eating at Rajdhani almost every trip. I started liking Dal Baati. I am sure kids would love it. Finally I managed to do it. They enjoyed it
Ingredients
For Baati / Bhati
Wheat flour – 1 cup
Sooji / Semolina / Rava – 1/4 cup
Baking powder – 1/4 teaspoon
Melted Ghee – 1/4 cup
Salt to taste
For Dal / Dhal
Masoor dal – 2 tablespoon
Toor / Thuvar dal – 2 tablespoon
Whole green gram dal – 2 tablespoon
skinned broken urad dal – 2 tablespoon
Channa dal / Bengal gram dal – 2 tablespoon
Onion – 1 (chopped)
Tomatoes – 2 (chopped)
Garlic – 4-5 pods (peeled and chopped)
Ginger paste – 1/2 teaspoon
Ghee / Oil – 1.5 tablespoon
Garam masala – 1/2 teaspoon
Red chilli powder – 1/2 teaspoon
Turmeric powder – 1/2 teaspoon
Coriander powder – 1 teaspoon
Green chillies – 1 slit into 2 and cut if needed
Cumin seeds – 1 teaspoon
Hing/ asafoetida – 1/4 teaspoon
Salt to taste
Coriander leaves – 1 tablespoon (finely chopped)
mint leaves – few
Method:
Wash and soak all the dals together for 2 hrs
Pressure cook with salt, turmeric powder for 1-2 whistles. Let it cool down
Heat ghee. Add Cumin seeds let it crackle. Add hing, green chillies fry for 30 sec. Add Onion, Ginger paste. Fry till transparent. Add Tomaotes and salt. Fry till mushy. Add Mint leaves. Add Garam masala, chilli powder,coriander powder and fry for a min or 2 in low flame.
When it is ok to open the cooker lid open it. Let it boil. Add Onion, tomato to it. Mix well. Add 2 cup of water and continue to cook.
Add coriander leaves and switch it off.
For Baati Take wheat flour, semolina, baking powder, salt and ghee bring it together to make nice crumble.
Add water little by little and make a stiff dough. Keep it aside min 1 hr.
Take small ball (slightly bigger than marble) and flatten it and make a dip in the middle. Arrange it in a baking tray
Pre heat oven at 180 degree and bake the baati for 40 mins or till it is brown in color and crisp. In between turn it over few times.
When it is warm apply ghee both sides. Now it is ready to serve
To serve break few pieces and pour dhal on it and add ghee ( I didn’t add)
