When I was asked to do 6 taste supplements to Aval Viktan I was thinking about recipes with bitter tastes. I had too many bitter gourd recipes. So I was not sure what else can be done. I tried this Sunda vathal podi. It turned out perfect esp with steamed with rice with addition of sutta ennai (oil used for frying) or with Ghee. If you are looking to include some Sundakkai for bitter taste this is really great option. This would go well with idli too
Ingredients
Sunda vathal/ Dry turkey berry – 2 tablespoon
Channa dal / bengal gram dal – 2 tablespoon
Urad dhal – 2 tablespoons
Red Red chilles – 5-8 (Adjust to your spice level)
Pepper Corns – 1/2 teaspoon
Sesame seeds – 1.5 tablespoon
Ghee – 1 teaspoon
Curry Leaves – 2 handful
Salt to taste
Method:
Dry roast Channa dal, Urad dhal and Red chillies Add Sesame seeds and roast till nice aroma released
Remove it. Heat Ghee add Sunda vathal. Roast till they are really crisp. Add Roasted Ingredients and mix well
Roast Curry leaves in Micowave
Powder Red chillies. Add rest of ingredients and powder it. (Make sure do quick pluses otherwise sesame seeds will leave oil and the powder may become paste instead)
Store it in Air tight container. Enjoy

The podi sounds very interesting… that platter looks so tempting…
