I wanted to try this American Chopsuey for quite sometime. However My husband not big fan of Tomato ketchup. Sauce for this noodles is mixes of Tomato ketch up, Chilli sauce so was postponing trying this for quite some time (in fact more than a year). Other day my son brought his friends home. So thought this dish would go well with them. They loved every bit of it. I used normal noodles. Hakka noodles will go well for this too
Ingredients
Noodle Sauce
Tomato sauce – 1/4 cup
Chilli sauce – 1/8 cup
Soya Sauce – 2 tablespoon
Vinegar – 2 teaspoon
Green chillies – 1 (chop and soak in vinegar)
Corn flour – 1 teaspoon
Water – 2 tablespoon
Water – 1 cup
Salt to taste
Pepper Powder – 1 teaspoon (Adjust to spice level)
Onion – 1 (chopped thinly)
Garlic – 4 pods (Peel and chop)
Mixed vegetables – 4 cups (Baby corn, 3 color Capsicum, Carrot, Cauliflower, Mushrooms, Pineapple)
Oil – 3 teaspoon
For Noodles
Cooked noodles – 5 cups
Oil for deep frying Noodles
Spring onion – 3 tablespoons
Method:
Cook Noodles per instruction on back. Let it dry out. Heat oil for deep fry.
Fry Cooked Noodles little by little till crispy. Once done leave it on kitchen tissue paper to drain extra oil
Heat oil in a pan. Add garlic and onion fry for 20 sec. Add All the vegetables (Except Pineapple),Salt mix well.
Fry till Vegetables are cooked.
Add sauces. Mix well.Mix corn flour with water. mix well make sure no lumps. Add Corn paste to cooked vegetables.
Add 1 cup of water, Pepper powder to the vegetables. Boil it add Pineapple mix well. Boil for another min
Take a bowl crush fried noodles and pour the sauce over it. Add chopped spring onion
Serve immediately. Enjoy
