Our family is fond of yogurt base gravy or curry. The other day in the market I saw this beautiful ladies finger /okra but it is not enough for making ladies finger fry, I was looking for options to use Ladies finger. Initially I was thinking about Besanwali bhindi or Stuffed okra. I had this achari okra in my to do list. So finally I have decided to do Achari Okra. It went well with roti/ you can serve it with hot steamed rice too.
Ingredients:
Okra / Ladies Finger – 400g
Oil – 1.5 tablespoon
Onion – 2 onion (medium. Finely chopped)
Tomatoes – 2 (medium size. Make a puree)
Ginger paste – 1/4 teaspoon
Garlic paste – 1 teaspoon
yogurt – 1/2 cup ( you can reduce it to 1/4 cup)
Coriander leaves – 1 tablespoon (finely chopped)
Hing / Asafoetida – 1/4 teaspoon
Salt to taste
Dry roast and grind
Mustard seeds – 3/4 teaspoon
Cumin powder – 1 teaspoon
Fennel seeds – 1 teaspoon
Onion Seeds – 1 teaspoon
Fenugreek seeds – 1/2 teaspoon
Red chillies – 3
Other Ingredients to grind
Coriander powder – 1 teasoon
Turmeric powder – 1/2 teaspoon
Method:
Dry roast the ingredients under Dry roast and grind section. Let it cool down
Add Coriander powder, Turmeric powder and grind to fine powder
Add 1 tablespoon of oil. Add sliced okra and fry in medium flame till sides are browned. Keep it aside
Add rest of oil. Add Sliced onion and fry till brown color. Add ginger, garlic paste and fry till raw smell released. Add hing, tomato puree.
Fry for a min. Add masala powder. Fry for another min. Add water and boil it. Add cooked Ladies finger Mix well. Cook for another min. Switch it off
Adjust salt and add whipped yogurt. mix well. Add Coriander leaves
Serve hot with Pulka or roti
