I wanted to try stuffed bitter gourd for quite some time. But was scared of masala coming out when frying. I brought cooking twine (thread) recently so decide to try out. Then next question is what to use for stuffing. I thought of mexican because with loads of onion and tomatoes in it will reduce the bitterness of bitter gourd. This came out very nice. I have used Lemon garlic flavoured bread crumbs but plain ones work as well.
Ingredients:
Bitter gourd – 1
White onion – 1/2 (chopped finely)
Tomatoes – 2-3 (chopped finely)
Salt to taste
Olive oil – 2 tablespoon
Avocado – 1/2 (cubed)
cooked Corn – 1/2 cup
Black beans – 1/4 cup
Coriander leaves – 2 tablespoon (finely chopped)
Bread crumbs – 1/4 cup
Corn flour – 2 tablespoon
All purpose flour – 2 tablespoon
Pepper powder – 1/2 teaspoon
Method:
Wash and soak Black beans overnight. cook it with salt. Drain away the water. Keep it aside.
Scrap the skin of bitter gourd. Divide it into 2 remove the seeds. Cook Bitter gourd with required salt. Drain the water and keep it aside
Heat 2 teaspoon of oil. Add onion, Add salt. Fry till transparent. Add tomatoes fry till mushy.
Add corn, cooked beans and coriander leaves. Mix well cook for another 2 mins. Switch it off. Add avocado. Mix well
Mix in Corn flour, all purpose flour, Pepper powder. Add water to make thick paste
Now Take one side of the bitter gourd and stuff it with onion tomatoes paste.
Cover it with other side of bitter gourd. Roll this carefully in the flour batter.
Roll this in bread crumbs. Tie it with the twine.
Heat rest of the oil in flat pan place bitter gourd and cook till all the sides are brown. Turning it at regular interval will give required result.
Once done remove it from pan and serve hot
