Whenever I have left over Chapathi and korma, this is a natural option for me as my kids love it. Recently I am purposely making it a little more so I do end up with left over. If you have left over korma, this is one of a very easy dish which you can make for lunch box or after school snacks. Of course you can still do without korma but it tastes amazing with korma. I have added spring onion and that gave a nice flavour to this kothu chapathi
Ingredients:
Chapathi – 10
Veg Korma – 2.5 cup
Onion – 1.5 (Medium. Finely chopped)
Oil – 3 teaspoon
Cumin seeds – 1 teaspoon
Garlic – 4 pods (finely chopped)
Curry Leaves – 10
Coriander leaves – 1 tablespoon
Salt to taste
Onion – 1 (slice thinly)
Spring onion – 1 cup
Method:
Cut the chapathi into thin strips. Heat oil in kada. Add Cumin seeds. let it crackle. Add Garlic pieces fry till brown in color. Add onion, Curry leaves and fry till onion is transparent. Add korma and let it boil till it thickens. Add chopped spring onion
Let it boil for another min. Add chopped chapathi and mix well. add coriander leaves and mix well.
Serve hot.
