When I saw this recipe on the internet / in few blogs it sounded more like Pizza pockets or Naan with yeast. I am a little vary of using Yeast in my recipes. I had a couple of total flops with yeast esp with dry yeast. Most of the time I buy bottle of yeast and leave it without use for a while and it dies… Now we started to get small sachets of yeast so it is a very convenient way of using it. Since kids are at home I wanted to try this for their evening snack. I used 50% whole wheat and 50% maida (all purpose flour). You can use full all purpose flour. Also you can add more vegetables like Broccoli, Tomatoes etc…
Ingredients:
For Dough
Wheat flour – 1/2 cup
All purpose flour – 1/2 cup
Salt to taste
Yeast – 1 teaspoon
Luke warm Milk – 1/2 cup
Sugar – 2 teaspoon
Oil – 1/4 cup + 2 teaspoon
Water to make dough
For Stuffing
White onion – 1/2 (diced)
Capsicum – 2 cups (I have used Green and yellow)
Salt to taste
Italian mixed herb – 1/2 teaspoon
Mushroom – 1 to 2 tablespoon
Pepper powder – 1/4 teaspoon
Pasta sauce – As required
Cheese – 2 teaspoon to 1 tablespoon (according to the preferrence)
Olive oil – 3 teaspoon
Method:
Take all dry ingredients in a bowl (Wheat, All purpose flour, salt, yeast, sugar). Mix well
Now make a dent in the middle add 1/4 cup oil and milk. Bring it together. At this stage you will get crumbled flour
Now add water little by little make a dough. Add 2 teaspoon of oil to make smooth dough. Cover it with cling wrap. Keep it aside for 1 hr in warm place and let the dough raise
Let’s prepare the stuffing. Add olive oil in a pan and heat it. Add onion fry for 2 mins or till they are cooked (make sure it is still crisp). Remove it. Add capsicum and fry for 2 mins.
Add salt, Italian herb and mix well. Fry till it is 3/4 th cooked (make sure the shape is still firm). Add mushroom, Carrot and fry 2 mins. Switch it off.
Now divide the dough into equal size balls. Rollout into thick disc.
Apply the pasta sauce add onion and vegetables and sprinkle cheese on one side of rolled disc.
Close it and seal all the side, I have used fork to get the design and make a hole on the top. Brush it with butter.
Pre heat oven at 180 degree C. Bake it at 180 degree C for 15 mins or till it gets browned.
Serve hot. Enjoy
