Healthy Ragi Chocolate Cake Recipe by Veena Theagarajan

My kids love cakes! They are open to try different types of cakes.  When I googled for Ragi chocolate cake I saw a fabulous recipe at Lite bite Ragi Chocolate Cake in Lite Bite. Loved the texture of it. Without hesitation I had decided to try it out. However I wanted to make it even more healthier. So I have substituted with whole wheat pastry flour and added oats. You can enjoy cake / dessert without guilt

Ingredients:

Whole wheat flour  – 1/2 cup
All purpose flour – 1/2 cup
Ragi flour – 1/2 cup
quick cooking Oats – 2 tablespoon
Salt a pinch
Sugar – 1/2 cup 
Coco powder – 1 tablespoon (unsweeten)
Baking powder – 3/4 teaspoon
Baking soda – 1/2 teaspoon
Milk – 3/4 cup
Vinegar – 1 tablespoon
Hot water – 1/2 cup
Oil – 1/4 cup
Vanilla essence – 3/4 teaspoon


Method:

Add 1 tablespoon of vinegar in 1/2 cup of milk. Leave it for 5 mins. 

Sift together couple of times whole wheat, ragi, salt, Baking soda, baking powder and salt.  Add oats and mix together. Keep it aside. 

Grease the baking pan with non stick oil and flour it. Keep it aside. Take a broader vessel add sugar and vanilla essence.

Add Hot water. Mix well till sugar dissolves. Add oil, Milk with vinegar, rest of milk, oil and vanilla essence. Mix well. 

Add dry ingredients in 2 batches. Mix till all are incorporated. 

Pour this batter to greased baking pan. Pre heat the oven at 180 C for 10 mins. Bake the cake for 25-28 mins or when inserted toothpick comes out clean.Let it cool down.
