I wanted to try Millet cake without any mix of Atta or All purpose flour but was not sure about the outcome. So I kept postponing it. However this time I brought freshly grinded Bajra Flour or Pearl Millet flour. So I decided to try out the cake. I had some Orgran, No Egg, Egg replacer in my fridge for quite sometime. I wanted to use that for the cake. You can use any Egg substiute (for 2 eggs) or Eggs to make this cake. To my surprise the cake was so soft and texture was little grainy. It tasted amazing. My 1st son who is not big fan of bajra loved it too. You cannot even figure out the difference. So dig in without guilt.
Ingredients:
Pearl millet / Kambu Mavvu / Bajra Flour – 100g
Coco powder – 50g
Baking powder – 1/2 teaspoon
Baking soda – a pinch
Sugar – 100g
Vanilla essence – 1 teaspoon
No Egg (egg replacer) – for 2 eggs
Milk – 200 ml
Oil – 50 ml
Salt – pinch
Milk Chocolate – 100g (melted. At room temp)
Method:
Pre Heat oven at 180 degree C. Melt the chocolate and bring it to room temp
Take a bowl Add Bajra Flour, Baking powder, Baking soda and Coco powder. Mix well. Keep it aside
In another broader vessel take Sugar, Oil, Vanilla Essence and Egg Re-placer. Whisk it to get smooth paste.
Add Milk and whisk again. Add melted chocolate and mix again.
Add dry ingredients in 2 batches. Mix again
Grease baking tray. And pour the batter. Bake at 180 degree C for 40-50 mins or when inserted toothpick comes out clean. Mine took almost 50 mins
Let it cool down and slice it
Enjoy it!

how to make this egg-less?
I have used Egg replacer you can use Flax Egg – 1 tablespoon Flax seeds + 2.5 tablespoon water
My cake sank in between. Why so?
hi there are many reasons key ones are overbeating or oven temperature is not correct or expired baking powder or batter left out so long
