Stuffed Okra recipe – Stuffed ladies finger recipe – Bharwa Bhindi – Gujarati Bhinda Sambhariya – Side dish recipes

I always have a fear of doing any stuffed vegetables but after trying stuffed brinjal / Eggplant the next item on my list is stuffed okra / ladies finger. I was looking for recipes on the net but in the end I made my own mix for stuffing. It came out pretty good. however I am sure it is not traditional recipe for stuffing. My kids loved it too in the end you want happy family meal not whether it is traditional or not right? My ladies finger was little bit longer so I cut into 2 but if you have smaller one you can just remove the end and the head portion and use the entire ladies finger
Ingredients:


Ladies Finger / Okra – 17-20
Oil – 1 tablespoon
Coriander Leaves – 1 tablespoon (finely chopped)


For Stuffing:
Asafoetida / Hing – 2 pinch
Besan flour – 1/2 cup
Grated coconut – 2 tablespoon
Roasted raw peanut powder – 1 tablespoon
Dry roasted Sesame seeds – 2 teaspoon
Turmeric powder – 1/2 teaspoon
Sambar powder – 1 teaspoon
Garam masala – 1/4 teaspoon
Oil – 1 tablespoon
Chat masala – 1/4 teaspoon (optional)
Salt to taste



Method:


Mix in the ingredients under for stuffing. Keep it aside.

Wash and pat dry ladies finger. Remove the ends and cut into 2 (if you are using full skip this). Slit the center of each pieces like what you see in the pic. 

Carefully stuff it with besan flour mixture. 

Leave  it aside for 10 mins. Heat oil and add stuffed okra

Close it with lid. Let it cook in low flame. Turn them regularly for even cooking. Add coriander leaves and mix well

Serve hot.
