I love Ragi vadai. I have posted plain ragi vada before. When my mum does it disappears very fast. It is very addictive.. I always find it difficult to stop. I wanted to try spinach ragi vada for very long time. Otherday when I was talking to my mum she was mentioning that she had done keerai ragi vada and it came out very good. I have got the recipe from her.. It came out pretty well
Ingredients:
Ragi / Finger Millet Flour – 2 cups
Spinach – 1 cup (finely chopped)
Rice Flour – 1/4 cup ( I have used Idiyappam flour)
Chilli powder – 1 teaspoon ( adjust to your spice level)
Water to make stiff dough
Asafoetida / Hing – 1tsp
Salt To Taste
Oil For Frying + 1 teaspoon for tempering
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Bengal gram dhal / chana dal – 1 teaspoon
Curry leaves – 10 (finely chopped)
Onion – 2 tablespoon (finely chopped)
Coriander leaves – 1 tablespoon (finely chopped)
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Bengal gram dhal / chana dal – 1 teaspoon
Curry leaves – 10 (finely chopped)
Onion – 2 tablespoon (finely chopped)
Coriander leaves – 1 tablespoon (finely chopped)
Method:
Heat the pan and add ragi flour and fry till nice aroma released.Heat oil in the pan and add curry leaves, mustard seeds, urad dhal and chana dal and fry till dhals are brown in color. Add onion and fry till transparent.
Add Spinach and fry till spinach is cooked. Add all other ingredients other than oil and using water make it stiff dough. Now close the dough with wet cloth and keep it aside for 1 hour.
Take a wet cloth. Take orange size ball and using your fingers make a round vada. Vada shouldn’t be too thick. make a hole in the center as show in the pic.
Heat the oil in deep pan when oil is hot add this vada and let it cook turn to other side and cook again (Till “shhhh” sound subside and no bubble in the oil) now drain the excess oil and take out the vada. Place it on the kitchen tissue to drain extra oil if any
Repeat the whole process till all the dough done. .Enjoy this snack
