I had this in my draft for a while. I thought I lost the step by step pic so I almost forgot about it. When I was cleaning the old storage I found the pics. This muffin is a very simple yet very tasty and filling breakfast item. Kids would love it for sure. So It is one way of feeding your kids with greens. I have Referred this recipe from here. It can be a good after school snack to the kids too. My kids enjoyed it as their morning breakfast /brunch. You can add dry tomatoes too I didn’t add tomatoes as my kids are not big fan of it
Ingredients:
Wet Ingredients
Milk – 3/4 cup
Butter – 45g
Yogurt – 2 tablespoon
Dry Ingredients
All purpose flour – 1.25 cup
Salt a pinch
Finely chopped Spinach – 1 to 1.25 cup (I have used fresh baby spinach)
Feta cheese – 1/2 cup (crumbled)
Grated Cheese – 2 tablespoon (I have used parmesan)
Baking soda – 1/4 teaspoon
Baking powder – 1.5 teaspoon
Red chilli flakes – 1 teaspoon
Black Pepper Powder – 1/4 teaspoon
Method:
Sift all purpose flour, salt, baking powder and baking soda couple of time. Add red chilli flakes and pepper powder. mix well
Take Chopped spinach, crumbled Feta cheese and grated parmesan (reserve 1.5 teaspoon) in wide bowl. Grease muffin tray and keep it aside
Add dry ingredients to spinach/cheese mixture. mix it well. Melt the butter (no need to boil) add milk and yogurt and whip it to mix well.
Add this dry ingredients and mix it well
Equally divide dough into muffin tray (I had 6 pieces) sprinkle some cheese on top. Pre heat the oven at 180 degree. Bake the muffin at 180 degree for 20 mins or till inserted tooth pick comes out clean. Let it cool down completely

Sorry never tried since it has Feta cheese I advice not to be frozen
