Our whole family is a big fan of Seppankizhangu. I always do Simple fry. Every time after tasting the fry in functions like marriage I always like to do similar fry at home. But always shy away because of the deep frying. But this time I could not resist.. This came out very crispy and kids loved it. So you can do it once to treat your taste bud. It can be a good dish that can be served as a snack and can goes well with all type of rice dish
Ingredients
Colocasia / arbi/ seppankizhangu – 15
Sambar powder – 1.5 teaspoon (you can adjust based on your spice level)
Red chilli powder – .5 teaspoon
Curry leaves – few
Rice flour – 2 teaspoon
Corn flour – 2 teaspoon
Ginger garlic paste – 1 teaspoon
Turmeric powder – 1/2 teaspoon
Salt as required
Oil for deep frying
Method:
Wash and cook the Seppankizhangu with salt. I have pressure cooked till 3 whistle. Peel the skin and cut that into your desired shape
Add everything else under ingredients except oil. And mix it well. Keep it aside for 1 hr
Heat the pan with oil for deep frying.
Add little by little Arbi mix and fry till all sides are cooked till golden brown. Fry them in low medium flame and turn them in between. Once cooked drain the extra oil and take it out and leave it on a kitchen tissue to drain the extra oil
Repeat the process. Serve hot
