Stuffed Mushroom Recipe – Snacks Recipe – Kids friendly Recipe

When I brought mushroom I had baked open stuffed mushroom in my mind. But My microwave got spoiled so I was wondering what else I can do. My helper was taking about deep fried stuffed mushroom. She vaguely remembered the recipe. I took the recipe from her and modified to our taste. My kids enjoyed every bite of it. I had more vegetable and less cheese. But you can vary the amount according to your taste.

Ingredients

Button mushrooms – 15 (wash and clean.)
Corn flour – 2 tablespoons
All purpose flour – 2 tablespoon
Salt to taste
pepper powder – 1/2 teaspoon
Bread crumbs – 1 cup or as required
Oil for deep frying

For Stuffing

Mashed potato – 1 cup
Garlic – 5 pods (peeled and chopped finely)
Coriander leaves – 1 tablespoon
Red chilli flakes – 1 teaspoon
Italian mixed herb / Oregano – 1/2 teaspoon
Grated cheese – 1/2 teaspoon per mushroom
Olive oil – 3 teaspoon

Method:

Wash and clean mushroom. Remove stem portion. Heat the pan with olive oil. Add chopped garlic and fry till light brown in color. Add mashed potato, Red chilli, Mixed Italian herb, salt. Mix it well. Add coriander leaves and mix it well. Keep it aside.

Take each mushroom Add cheese and add a 1.5 teaspoon of Potato stuffing. Repeat it for all mushroom. Keep it aside


Mix Corn flour, all purpose flour, salt, pepper powder and water. Make a thick paste. keep it aside


Dip each mushroom in the cornflour paste.  Roll that in bread crumbs. Repeat the process till all mushrooms are done
Repeat the process till all mushrooms are done. Heat oil in deep curved pan. Once hot deep fry few mushrooms at a time 
Make sure all sides are fired till golden brown color. And leave it on kitchen tissue paper to drain extra oil


Serve hot
