Best Mango Kulfi Recipe

My husband loves Kulfi. Also after trying out Kulfi, I wanted to try out Mango kulfi. This year for some reason I liked alphonso mango more than all other varieties (May be I am not choosing right ones). In Kulfi I have used bread for thickening but this time I tried corn flour for thickening. Even though both tasted good I preferred the bread choice is yours! Mango and saffron combo is my favourite too. So I have added saffron to this Kulfi too.
Ingredients


Milk – 2.5 cup (I have used whole fat milk)
Mango – 2 alphonso 
Sugar to taste – I have used 1 tablespoon of brown sugar
Saffron – a pinch
Corn flour – 1/2 teaspoon
Pistachio / Pista – 2 tablespoon (roughly chopped)
Cardamom powder – 1/4 teaspoon



Method:


Peel mango and chop it . .Grind it to smooth paste.

Boil the milk. Take a tablespoon of milk and add crushed saffron (rest of the milk continue to boil). Take 1/4 cup of cold milk in a bowl. Mix in Corn flour and keep it aside

Boil the milk till it is reduced to half.. Add Sugar. Continue to boil till sugar dissolves.

Add saffron milk. Add corn flour paste. Mix well. Continue to boil for 30 sec

Let it cool down. Add Mango paste. Cardamom powder, Pista (reserve 1 teaspoon for garnishing) mix well

Once completely cool down pour it in kulfi mould. Freeze it for 6 hrs or over night
When needed take it out and run it under pipe water

Remove it from mould and slice it. Garnish it with Pista. Serve it chill
