Mudakathan keerai /Balloon vine leaves/Harivay Soppu/buddakakara is something new to me.. I never had this during my growing up days. Only these days I heard lot about it. Other day When I visited Trichy I was walking around Teppakulam (NSB road) I saw a a girl selling fresh green leaves (Keerai) I saw this green chunk and was not sure what it was my mum told me that this mudakathan keerai! Without any hesitation I brought it. For my mum also this is new so I have decided to follow spinach dosa but made some changes to it according to my mum suggestion
Ingredients
Idli rice – 2 cups
Urad dhal – 1/4 cup
Fenugreek seeds – 1/4 teaspoon
Salt to taste
Mudakathan Keerai – 2 cups
Oil for cooking dosa
Method:
Wash and soak rice, urad dhal and fenugreek seeds for 3 hrs. Mudakathan keerai would be like the one in the pic
Remove mudakathan leaves and wash and drain it. Grind the soaked rice into smooth batter. Grind mudakathan keerai too.
Grind to Dosa batter consistency. Let it ferment it overnight
Heat the dosa pan and take a laddle full of batter and spread it. Drizzle oil around it and cook it. Turn it over and cook again
Serve hot with your favourite chutney
