Vegetable Black Rice Dosa Recipe – Vegetable Black Rice Uttappam Recipe- Healthy breakfast, dinner recipe

I love to try different dosas.. I had Black rice left in the fridge after black rice kheer. I wanted to try it out as dosa however later my son wanted uttappam (with mixed vegetables). Black rice is considered to be very healthy. One of my colleague from Vietnam told me in Vietnamese cuisine they use black rice for weight loss and to control hair fall. I kind of like to add cooked black rice into my salad. These days we get black rice milk in the market too. This dosa is one good recipe to include black rice as part of your diet
Ingredients

Idli Rice – 2 Cup

Black rice – 1 cup
Urad Dhal – 1/4 cup
Cashewnuts – 10
Salt to taste
Fenugreek Seeds – 1/4 teaspoon
Oil for cooking Dosa + 1 teaspoon
Mixed Vegetables – 1 cup
Coriander leaves – 3 tablespoon (finely chopped)
Onion – 1 (finely chopped)


Method:


Wash and soak Rice, Fenugreek seeds, Urad dhal for 5-7 hrs. Grind it with required water to smooth batter

Add Salt and mix well. Let it ferment it. Clean and chop Vegetables. Cook it with required salt. Add it to the batter.

Add a teaspoon of oil add chopped onion and fry till brown in color. Mix fried onion with Fermented batter. Mix well. Add coriander leaves and mix well. 

Heat flat pan and Pour laddle full of batter spread it. Sprinkle oil around it. Let it cook. Turn it over and cook. Once done take it out

Serve hot
