Pesto Cowpeas sandwich – Blackeyed pea Pesto Sandwich – Healthy breakfast recipe – Snack recipe

My
kids love the taste of pesto. Originally I wanted to try pesto sundal but
after making the pesto my kids were commenting it would be good with bread. So I
had decided to make sandwich. It is perfect for kids lunch box or after school
snack too. Pesto and cow pea / black eye pea is perfect combo. After this I tried with chickpea I loved the combo with cow pea. Do try this and provide your feedback

Ingredients


For Pesto

Coriander leaves – 1 cup
Basil leaves – 1/2 cup
Green chillies – 2
Pepper powder – 1/2 teaspoon (adjust to your spice level)
Parmesan cheese – 1/2 cup
Olive oil – 1/4 cup
Salt to taste
Garlic – 5 pods
Small onion – 4 (slice them roughly)
Almond / Walnut – 7-10



For Sandwich


CowPea / Black Eye pea – 1 cup
Salt to taste
Bread – 10 slices
butter as required for toast



Method:


Wash and Soak the Cowpea / black eye beans for 3 hrs. Cook it with salt and drain extra water and keep it aside

Grind together all the ingredients under for Pesto with little water (I have added 1/4 cup)
Heat pan and add grinded pesto and fry till nice aroma released / raw smell goes off

Add cooked Cow pea and fry till it become dry. Switch it off. and keep it aside

Butter bread and heat flat pan. Place the buttered side touching the pan and spread pesto cowpea paste on one side of the bread. Once toasted close it off and remove it from pan

Serve hot

    I also use pesto without frying generally. But cooking it together with the peas is so great to combine the flavor well! Great recipe. Healthy too 🙂
