Our family is not a big consumer of pickles. However my helper really loves pickles. She normally makes lemon pickle. She uses a lot of jaggery for the pickle too. For me it is a different flavor than what my mum makes. At first when she did I was scared by the amount of chillies she used but when I tasted it, it was not that hot.. Maybe because of the Jaggery. Also this pickle tastes good after about 1 week. Do try and Enjoy
Ingredients:
Lemon – 10
Curry Leaves – 20
Urad dal – 2 teaspoon
Chana dal / bengal gram dhal – 2 teaspoon
Mustard seeds – 1 teaspoon
Asafoetida- a pinch
Salt to taste
Jaggery – 1 cup
Turmeric powder – 1/2 teaspoon
Red chilli powder – 1/2 teaspoon
Green chillies – 10-15 (adjust to your spice level. Just use it as full no need to cut or slit)
Fenugreek powder – 1/4 teaspoon
Oil – 1/4 cup
Method:
Heat the oil. Add mustard seeds let it pop. Add urad dal, Chana dal, Green chillies, Curry leaves and asafoetida. Fry till dhals are brown in color. Add cooked lemon, Turmeric powder, Red chilli powder and Fenugreek powder
