I love kheer recipes. Anytime. You can make it as a healthy dessert or a very rich dessert,but choice is yours.. It can be good snack, morning breakfast, or dessert. Recently I heard lot about black rice. What I heard from my Vietnamese friend is that it is good for hair. It is high in antioxidants. In summary, it is good to include this as part of our diet.Happy new year to all!
Ingredients


Kavuni Arisi/ Black rice – 1/2 cup
Milk – 5 cups
Sugar – 1/2 cup to 3/4 cup

Water – 1/2
Mixed nuts  – 2 tablespoons (I have used mix of cashew and almond)
Ghee – 2 teaspoon
Cardamom powder – a pinch


Method:

Wash and soak Black rice for 4 hrs. Just run the soaked Rice into smaller chunks (using food processor or blender.

Heat 2 teaspoon of ghee  and fry the nuts and raisin till slight brown color. Keep it aside.

Cook the rice with 3 cups of milk, 1/2 cup of water and cook it.I have used pressure cooker and cook till 4 whistles. Switch it off

Add Sugar and rest of milk. Let it boil till it reduced into 1/2.

Add Cardamom and fried nuts. 

Switch it off and serve hot or cold

    I had seen black rice on my visit to Wayanad this vacation. Though I was tempted to pick up a small packet, the stare from HD prevented me from doing it… hehe… Lovely kheer, will refer back if I am able to pick up a packet next time… 🙂
